Beef bone-in short ribs are a flavorful cut of beef that must be slow cooked to become tender. They are cut from the rib and plate primal and a small corner of the square-cut chuck. Beef short ribs typically have alternating layers of lean meat and fat, including rib bones, and require slow cooking methods like braising, smoking, or slow roasting to become tender.
Bone-In Beef Chuck English-style short ribs are cut parallel to the bone, leaving a thick cut of meat on one side of it. After a long, slow braise they tend to retain their shape, making for a beautiful presentation, as well as a soft, flavorful cut of meat. This may takes a few hour over low heat, but trust us — it’s worth the wait!
